I don't own the car yet, scheduled to arrive sometime in 2024. Is this something that a "not handy" person can do on their own? I'm thinking of lowering the seat, as have heard from many people on here that it is positioned too high.

Trim pieces and the seat adjustment handle are a bit of a pain to remove, but other than that the instructions are pretty much straightforward.
I did it on my own car with the help of a mate (helps when you're trying to take off some of the hard to reach bolts, and need someone to pull a bit on a plastic trim piece while you're cranking the ratchet/spanner), so I'd suggest not doing it on your own if you're "not that handy" :)

I’m 6’2 and don’t find the seat height a problem. If it starts to feel too high I drive my girlfriends Dacia Duster for a wee bit then the Yaris feels proper sporty 😂🤷🏼‍♂️

That's what I was telling myself in the beginning (I'm 190cm tall). I've now admitted to myself though that the seating position wasn't designed for people our height but moreso for people that are around 175cm. Some tall people might fit in there pretty well but I certainly wouldn't call my seating position in the car especially comfortable even though I recognize that the seats themselves are good. I will be replacing my seats sometime soon to gain more headroom and to get into a more comfortable angle with my legs.
