if I start the car to defrost and go back in the house(with the key). If someone tries to nick the car does it stop when the key is out of range?

You could start the car then lock it mechanically from outside, although I can’t remember is the locking barrel is visible on the GR or if you’d have to pop off the side cap.
I used to do that with my MX-5 as the lock was externally visible.

No, the car I believe would continue to drive until it was physically switched off.
However, the car could not be restarted.

Happy to be proven wrong!
