Conspicuous that he was having to use the handbrake, not the throttle, to get the back out.

Looks like marvellous fun though.

Throttle is for rwd cars and for awd cars that don't have a manual handbrake ;)

Yes, noticed he popped it in track rather than sport, which seemed odd seeing as the intention appeared to be to get the back out as much as possible

Sport is nice for a little powerslide out of bend. For getting the car sideways already slowing down, one can use scandi flick, trail or left foot braking or the handbrake, or a combo of them.
Handbrake is very controllable and 99% of rally drivers use it on hairpins...
 
As already posted sport provides more grip it will slide but a lot easier in track. Whenever the weather was poor I used to run in track as my mind said more grip it made the car very playful not always positively for the trousers 🤣 now I run generally in sport and if I want to slide like today track and expert and off we go on command no handbrake needed.
